Using a traditional double fermentation method they produce small batches of wine vinegars. Using seasonal fruits, roots and berries, either home grown, locally sourced or foraged, the produce is made into wine and then fermented again into vinegar. This process takes 12 - 18 months. All the vinegars are raw, contain 'the mother', are vegan friendly and contain no allergens.
